Baimon Farm Community Enterprise
Baimon Farm Community Enterprise developed Tom Yum flavored fried short-tail crickets in response to increasing cricket production from their expanding network of farmers, which led to price suppression. To add value and control pricing, the group sought expertise from Professor Dr. Yupa Hanboonsong, an entomology expert at Khon Kaen University's Faculty of Agriculture, for processing techniques.
This knowledge was then applied to create the crispy fried crickets. Numerous government agencies have also supported the enterprise with information, marketing, and funding to purchase produce from farmers.
