Plant-based Pickled Fish is developed from traditional Northeastern Thai culinary heritage and transformed into a plant-based alternative with support from the Future Food Program. Young jackfruit, job’s tears, and chickpeas are used in place of fish, offering a familiar local flavor for consumers who reduce or avoid animal products while still seeking the taste of classic Isan cuisine.
